It’s time to get outdoors and enjoy some fresh and healthy food! That’s why this week’s meal plan includes delicious options like Grilled Chicken with the best peach and cucumber salsa, a Turkey Apple Burger everyone will love, and a Grilled Chicken Greek Salad with all the fixings.
It starts out with Pepper and Goat Cheese Frittata, a Grilled Chicken Greek Salad, and Slow Cooker Simple Pork Tenderloin. Monday brings Creamy Tortellini with Tomatoes and Tuesday is Soy and Mango Vinegar Marinated Chicken Thighs with Sugar Snap Peas. Wednesday is Picadillo and Thursday is Grilled Chicken with Peach Salsa. To end the week, meals include Turkey Apple Burgers and Grilled Tuna with Pineapple Salsa.

Here are some of the meals in this week’s meal plan!
Grilled Chicken Greek Salad: I crave Greek salads at least once a week, so this is always in the rotation. It’s packed with everything a good Greek salad needs – feta, olives, parsley, cucumbers, tomatoes, red onions, pepperoncinis, and some grilled chicken for protein.
Soy and Mango Marinated Chicken Thighs and Snap Peas: This is an older recipe but one you don’t want to miss. The chicken has so much flavor from the soy and mango vinegar.
Picadillo: This Mexican version of picadillo is made with ground beef, potatoes, carrots, and a chipotle tomato sauce. You won’t regret it.
Creamy Tortellini with Tomatoes: We eat pasta at least once a week and I love switching things up with a filled pasta. This one is served in a lightened up creamy sauce that is the perfect blend of tomato sauce and cream sauce.
