How To Cook Baked Alaska

The thin layers of ice cream are separated by crunchy graham crackers and pure, fudge sauce, you can also add sparklers for a bit of drama. Assemble this desert the day before, and make sure to clear a space in your freezer before you start assembling. This recipe can easily be cut in half, just bake the brownie base in a 9-inch square pan, or you can bake it in the 12 x 9-inch pan and just use half.

Ingredients:

Brownies

6 cup peppermint stick ice cream, slightly softened

1 1/2 cups fudge sauce, plus more for serving (this may be purchased, or use 1/2 recipe Hot Fudge Sauce

One 15-ounce box regular graham crackers

1 1/2 cups egg whites (from approximately 10 large eggs)

1/4 teaspoon cream of tartar

2 1/4 cups sugar

Directions:

Remove the brownies from their baking pan and remove the paper from the bottom. Cut a piece of cardboard the same size as the brownies and wrap it in a double layer of foil. Place the brownies on the foil-covered cardboard, and place this on a baking sheet that will fit into your freezer. Working quickly, spread the brownie with 2 cups of the peppermint ice cream. Then drizzle 1/2 cup of fudge sauce on the ice-cream layer. Top with a single layer of graham crackers. Place the tray in the freezer until firm, at least 30 minutes. Repeat the laying process two more times and, at the last layer, also cover the outside edges with graham crackers. Return to the freezer.

In a large bowl, whip the edge whites at high speed with the cream of tartar until they are foamy. Slowly add the sugar and whip until the sugar is dissolved and the whites have tripled in volume and hold stiff peaks. Spread the whipped whites over the ice-cream cake evenly. Using an offset spatula, make a swirling pattern in the meringue, you could also use a piping bag with a large star trip to decorate it in the same way. Freeze for 3 hours. The cake can be prepared to this point a day or two in advance and kept frozen.

To serve, preheat the oven to 500 degrees F. Place the dessert directly from the freezer into the oven and bake until it is well browned, 3 to 4 minutes. Place sparklers in the cake to take it to the table for a dramatic presentation! Serve in slices with extra fudge sauce on the side.
